Now that fall is officially here, I asked Fanny Singer, who co-founded The Green Spoon with Greta Caruso, about her favorite ways to prepare pumpkin, a fall staple.

Fanny: We love using it throughout the week. Here are a few ideas: You could make bean and squash tacos, squash scrambled eggs, and kabocha mac ‘n’ cheese.

Fanny: Don’t make the cooking technique too complicated! Just cut the whole pumpkin in half, remove the seeds, drizzle a little olive oil over it and fry it long and slow. It’s almost impossible to overcook it and it takes three minutes to prepare.

Fanny: You can make a nice substitute for mashed potatoes. Take a pumpkin without the skin, mash it thoroughly and then heat it in a pan with a little water or stock, a splash of whole milk or cream and a knob of butter. Add salt and pepper and a pinch of nutmeg and voilà!
